By now, you are probably all aware I believe in BREAKFAST! That's right. I have breakfast each and every day, and I think you should too. After all, it's the first meal of the day, and it gives you energy and fuel to keep up with everything. However, some breakfasts won't really give you any energy, and you'll probably just end up crashing later on. Examples of these (I know you don't want to hear it, but...!) are Poptarts, sugary cereals, super-sweet granola bars, donuts, and so on. But don't worry, there are PLENTY of great choices your body will love! Some of my favorite healthy breakfasts are eggs, oatmeal, smoothies, yogurt, quinoa, (check out Chia Tea Breakfast Quinoa!), whole-grain waffles and pancakes...the list goes on and on. There's something for everyone! But today, I just thought I'd add another great addition to your breakfast menu, because you can never have enough options. (Also, this recipe is, like, really really good). Today we're making Spinach and Goat Cheese Eggs! Yes...it probably sounds gross and weird, but I love this combination. And if you don't know what goat cheese is, we'll get to that too. :) I love eggs. I have them all the time, and my family likes to make them a lot over the weekend. Mostly, I eat scrambled eggs, so it's easy to mix in fun "add-ins." (I don't know what do call them...?!) I raided the fridge one day, and found spinach and goat cheese! Hopefully everyone knows what spinach is, but goat cheese is a less common. It comes in a sort of clear, plastic "tube" and it's white and really creamy. It's not your normal cheese consistency either, it's softer, and my brother describes the texture as "wet clay." (Actually a decent description). Taste wise...it's delicious. Creamy. Smooth. I kind of scoop it out of the package with a spoon when I put it on stuff. It sort of reminds me of cream cheese. One more thing...this is a good cheese for dairy allergies. I don't think it's 100% "dairy free," but I know people who have dairy issues and this cheese causes no problems for them. Aaanyway. I put the spinach and goat cheese into my eggs, and it tasted amazing! Now I always try to add these in. I do the spinach for the health benefits, and while goat cheese isn't necessarily unhealthy; I add it in for taste reasons. I hope you like this recipe as much as I do! Enjoy!! Spinach and Goat Cheese Eggs (serves 1): 2 eggs a handful of spinach goat cheese salt and pepper to taste cooking spray Spray a small frying pan with cooking spray. Then, crack your eggs in and whisk together using a whisk. Turn heat to medium to cook for a few minutes, but watch and turn the eggs with a metal spatula. Sprinkle in salt and pepper to taste. Once the eggs are look to be almost done (but not fully cooked yet), toss in a handful of chopped, washed spinach leaves. I'd say maybe 5-10 leaves or so. Combine the spinach and eggs with the spatula. When the eggs are done, serve onto your plate. Then, scoop out a spoonful or two of goat cheese over your eggs. You can kind of sprinkle it around, too. The cheese will get all melty and delicious. :) Eat your scrumptious breakfast with whole grain toast, fruit, or yogurt! Enjoy this nutritious breakfast! There you have it!
