First of all, happy summer! I'm so, so, glad school's out. It's time to hit the beach, go to the lake, be outside, and RELAX. But maybe most of all, it's time to chillout with an ice pop!!
Ice pops (better known as popsicles), are one of my most favorite things! All summer long I can be found whipping up new pop flavors with my friends. Already I've had a summer party and the dessert was homemade ice pops! So, let me share with you not one, but two delicious summer ice pop recipes I came up with. There's no refined sugar or sweetener in both recipes - although they do use chocolate, because who doesn't love a little chocolate?! Both recipes make about 4 ice pops - double if you need to. Summer ice pop recipe #1: Strawberry Cream 1 cup vanilla yogurt 1 cup milk 1/2 cup fresh strawberries 1 teaspoon vanilla 1 to 2 drops red food coloring, optional chocolate magic shell topping, optional Summer ice pop recipe #2: Mint Chocolate Chip 1 cup vanilla yogurt 1 cup milk 1/2 cup chocolate chips 1 teaspoon vanilla 1 to 2 teaspoons mint extract 1 to 2 drops green food coloring, optional chocolate magic shell topping, optional Combine all ingredients into a large bowl and stir. Put into your favorite ice pop molds (you can also use Dixie cups!), put sticks in, and freeze overnight. To get the pops out, run under hot water for 1 to 2 minutes. Drizzle chocolate magic shell on top of the ice pops too, if desired. Enjoy with your friends! Happy summer. Try making your own flavors, too!
