My mouth is watering again. And I've already eaten approximately 2 1/2. Anyway, happy muffin day! It's time to get out the tins and whip up a batch of this super simple, delectable blueberry muffins. Your friends and fam will thank you, I'm sure. ;) There's only a handful of ingredients in these - with names you can pronounce, and you'll also probably have them on hand. I can't wait any longer, let me give you the recipe!! Blueberry Muffins (makes 12): 1 egg 1/2 cup milk of your choice (I used regular cow milk, 2%) 1/2 cup vegetable oil 1 teaspoon vanilla 1 cup all-purpose flour 1 cup oats 1/3 cup sugar 3 teaspoons baking powder a pinch of salt 2 cups blueberries cinnamon and nutmeg Preheat the oven to 400 degrees. Grease (or line) the bottoms of your muffin tins. Whisk together the egg, milk, oil and vanilla. Then add in the flour, oats, sugar, baking powder, and salt. Fold in the blueberries. Fill the muffin cups almost to the top, and sprinkle on cinnamon and nutmeg, if you choose. Bake for 20 minutes. Remove the muffins from the pan once they've cooled, and DEVOUR!! Yum! See captions!
