As I'm sure you all may know, Valentine's Day is just around the corner! When I think of Valentine's Day, I think of love (of course), but also delicious red and pink food. That's why, in honor of Valentine's Day, I have two special recipes planned. The first is this post - tomato soup. The second will be coming out on Tuesday, the real Valentine's Day. But I couldn't wait any longer, so I had to post this recipe, at least! Just to let you know, this "tomato" soup has a spin. There are carrots in it! (That's why the soup isn't that red, above. I tried). I promise this isn't some gross carrot soup - you can't even taste the carrots. The soup is super healthy, creamy, and gives you a different version of this American classic. I encourage you to give it a try - who knows, you may have just found your go-to soup recipe. Happy Heart Day! "Tomato" Carrot Soup (serves 6): 3/4 of an onion, peeled and cut into quarters 3 large carrots, cut into pieces 1/2 stick of butter (if salted add less salt at the end) 4-5 large tomatoes 3-4 cups of chicken broth/stock (add less for thick soup and vice-versa) salt and pepper to taste Wash and peel/cut your veggies. Sauté the onions, carrots, and butter, for about 3 to 4 minutes in a large saucepan. Add in the quartered tomatoes and chicken broth; bring to a boil. Cover and simmer for about 20 minutes. Let cool before blending. Then, pour everything into a Vitamix blender and blend until smooth and creamy. (If you do not have a Vitamix, make sure you remove the skin from the tomatoes, otherwise it will be very gritty. Then you can just blend normally in your blender). Pour your soup into bowls, and add salt and pepper to your liking. Serve with fresh bread, and Parmesan, if desired. Enjoy your sort-of-red Valentine's Day meal!
