Guys...it's time...for QUINOA! Yaaaay. This recipe is so tasty - it tastes just like the real thing! And do you know what that is? Chai tea! Who doesn't love it?
I always am craving a chai tea latte - hot in the winter, iced in the summer - but I know it probably isn't the best thing for me, since it does have a lot of added sugar. (However, if you hate milk but need that calcium, it is a great way to add some dairy into your diet. Dairy is fantastic for strong teeth and bones!) Anyway, I wanted to still eat something chai-tasting, but a healthier option of the real thing. That's when I discovered chai tea QUINOA! Omyesss! It is so, so, delicious, nourishing, plus it tastes JUST like chai tea. I don't know how @accordingtoelle does it, but it's amazing. You may want to eat this with a side cup of chai tea... :) INGREDIENTS 1 cup quinoa 2 cups milk of your choice 1 large egg white 1 1/2 tablespoons brown sugar, unpacked 1/4 teaspoon pure vanilla extract 1/4 teaspoon ground cardamom 1/4 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon nutmeg 2 dashes ground cloves unsweetened coconut flakes and/or nuts for topping (optional - but walnuts add a delicious finish) DIRECTIONS Bring milk to a full simmer in a small saucepan. Add quinoa, return to a simmer and reduce heat to the lowest setting. Cover, leaving a tiny crack for steam to escape, and simmer until about two-thirds of the milk has been absorbed, about 15 minutes. Remove from heat and stir in egg white, brown sugar, vanilla and spices. Return pan to stove, covering again with a tiny crack for steam to escape, and continue to cook on low until almost all the milk has been absorbed, about 5 minutes.
