It's almost the Fourth of July!!! In honor of our independence day, I've been putting together some patriotic recipes for you. If you missed yesterday's Red White & Blue Bars, be sure to check them out! But today I have a new recipe for you - fruit pizza. I looove fruit pizza, no joke. Normally fruit pizza is one big "pizza," and you cut your own slices, but I thought it would be more fun to have everybody get their own pizza. That's why (see picture above) there's lots of little cookies so everyone can have their own mini personal pizza! Yay. The crust of fruit pizza is normally sugar cookie. I'm not going to specifically give a sugar cookie recipe to you, though, because you may have a favorite one or just buy pre-made crust. I used one that I found on Pinterest, and if you just search "fruit pizza," you can find a recipe, too. If you're gluten-free or have other allergies, you can just use your favorite allergy-friendly recipe as well. Ok, let's make fruit pizza! Fourth of July Fruit Pizza: 1 dozen sugar cookies (use your favorite recipe!) 1 package cream cheese, softened for 10 minutes 1/2 cup powdered sugar 1 teaspoon vanilla extract sliced strawberries blueberries Make sugar cookies according to directions. Let cool. In a small mixing bowl, beat cream cheese, powdered sugar, and vanilla. Your frosting should be thick and not too sweet. Spread onto cookies. Wash berries, and slice strawberries. Place onto cookie in whatever design you'd like, or you can copy the one in my picture above. :) Enjoy, and Happy Independence Day! Picture and recipe by: Ashley
