Doesn't that cookie dough just look fabulous?! You guessed it; chocolate chip cookies are today's recipe!! (But psst. These are better for you than the normal version!!). ALSO, this recipe is gluten-free! So for all you allergy people out there, you can rejoice because HERE IS THE ANSWER TO YOUR COOKIE PROBS. I could hardly tell this recipe is gluten-free, and that's saying something. But remember, you can still make this even if you aren't GF. These cookies are a classic....aaand delicious! Let's get to today's recipe. Gluten-free Chocolate Chippers (makes 12):
Directions: Preheat oven to 350. Combine the King Arthur Gluten Free Baking Mix and oatmeal into a small bowl. Beat butter (or coconut oil), granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. DEVOUR!!!
