Hey guys!! I know I took August and September off, but now I'm back (and delicious recipes are too). :) Fall is my favorite season, so of course they'll be lots of fall-themed recipes, just like the Pumpkin Smoothie from last year. Definitely give it a try - it's one of my go-to's in the fall. Pumpkin is super healthy for you!! Speaking of pumpkin, that's today's star! These Pumpkin Cookies are unbelievable and an old recipes of my mom's. It's also a super easy recipe and easy-to-follow directions (the cookies only take 10 minutes to bake, so that's only 10 minutes before eating!!) We have them every year in the fall and sometimes not in the fall too... :) Anyway, I'm sure you'll fall in love, so make this this weekend! They're a tasty (aaand healthy) treat. PUMPKIN COOKIES - makes about 3 dzn Ingredients: 1 cup canned pumpkin 2 cups flour (1 cup regular 1 cup whole wheat) 1 cup sugar 1/2 cup butter 1 tsp. baking soda 1 tsp. baking powder pinch of nutmeg pinch of cinnamon GLAZE: 1 cup confectioner's sugar splash of milk 1 tsp. vanilla 2 Tbsp. butter Preheat oven to 375 degrees Fahrenheit. Mix all ingredients for cookies together using beaters. Drop onto a baking sheet using spoons and bake for 10 minutes. Beat ingredients together for the glaze and frost once the cookies are cool.
