It's only been about a month since I've started blogging. I LOVE it, although I'm not sure if anyone is really out there...
Let me get to the point. I've done breakfast recipes, desserts, smoothies, and main dishes mostly here on Green Teen. But never have I ever done a side dish, (unless I can count Banana Ice Cream as a side?), so that's today's recipe. Side dishes are still important! Anyway, you loved Tomato Pasta with Parmesan so I'm gonna predict you'll like this side dish too, since it also uses tomatoes. (And who doesn't like tomatoes???) Drumroll...this side dish is called Tomato Salad. Sounds deliiiicous, am I right? I guess it's not totally salad, but people still call fruit "salad!", so this is also salad. However, it's really easy to modify, and you can throw in whatever you have. I used basil in mine (picture above), but my family also often uses cucumbers. So let's make it! Tomato "Salad": Ingredients: 1 cup cherry tomatoes, cut in half 1/2 mini mozzarella balls/cubes 1/2 cup mini cucumbers, chopped (optional) chopped basil (optional) 1 Tbsp. balsamic vinegar salt to taste Combine everything in serving dish of your choice. You can add more of something if you'd like - if you want more tomatoes, add 'em in! Or if you want more balsamic, go for it. You can eat your salad plain with a spoon, with crackers, tortilla chips, or bread. This is a great side to make for an impromptu party or when you have company. Enjoy, my healthy friends!! :)
