So...today I'm featuring the first reader recipe!! Super excited that I get to share Jlee's pumpkin smoothie. It's soooo tasty, guys! She did a great job. And this recipe is the perfect way to savor the last bit of fall before it's WINTER! Don't worry though, I have SUPA fun recipes coming later in honor of Christmas. :)
Anyway, enjoy the last bit of November with this happy'n'healthy smoothie, because who doesn't love pumpkin? If I had started this blog in September guys, believe me when I say there would probably be about ten pumpkin recipes right now. That's how much I love pumpkin.
Well then, I suggest you make this smoothie right now (unless you can't sleep and you are reading this and it's like 3am. Probably not a good idea to wake your whole family with the sound of a blender.) But unless that is your situation, I would get the blender out right now because even though no one says you can't eat pumpkin in winter, this is a great final pumpkin recipe of fall! So I'll leave ya to it!!
Creamy Pumpkin Smoothie:
Ingredients (serves 1-2):
1 cup milk of your choice (almond, soy, regular)
1 cup all natural canned pumpkin (NOT pumpkin pie filling)
1 banana (optional)
1 cup yogurt
Brown sugar to taste
Put all ingredients into a blender except ice. The brown sugar is to taste, if it isn't sweet enough you can add more because... :). Add ice at the end. Remember you can make this smoothie yours - add vanilla, more pumpkin, etc.
