Often during the lull of winter, a refreshing pick-me-up is exactly what anyone needs. This healthy version of a Pina Colada smoothie is energizing and delicious. It's naturally very sweet, so it's the perfect compliment to a hearty breakfast or a better-for-you dessert. And with only a few simple ingredients, it can be made in 5-10 minutes.
Pina Colada Smoothie (serves 2): 1 cup fresh or frozen chopped pineapple 1 cup frozen coconut chunks (I used Trader Joe's frozen coconut) 1/2 cup pineapple juice 1/2 cup water a spoonful of your favorite protein powder, for added nutrition (I put in a tablespoon of maca powder, which has a naturally nutty flavor and is good for boosting energy) Add ingredients into your blender in the order listed above and blend until smooth.
