The best dinners are easy to make, taste good, and don't leave you feeling guilty about what you just ate. Tomato Pasta fits in all of those categories! This is one of my favorite healthy meals. All it is are your fave noodles (I used whole wheat penne), and this homemade tomato sauce. It takes fresh and delicious, straight out of an Italian restaurant!!
Make it for dinner today!
Tomato Pasta with Parmesan:
1 box whole grain penne pasta (or whatever noodles you like; can be GF)
1 garlic clove
2 cups fresh diced tomatoes
2 Tbsp. red wine vinaigrette
2 tsp. salt (to taste)
sliced turkey sausage, optional
Boil pasta according to instructions on the back of the box. Get out a large pan (turn on medium heat), and add the minced garlic clove. Next, add all the tomatoes and the vinaigrette. Simmer it and wait until the tomatoes are nice and soft, but not too mushy. And that's it, you're done with the sauce! How simple is that?!
Finish and serve with Parmesan cheese, basil, and/or bread. I hope you enjoy! Tell me what you think in the comments below. :)
