Are you ever just like THAT lazy and you don't want to waste time making a healthy meal so you just eat ice cream for dinner? (Guilty.) And I'm not saying that's wrong, I'm just saying, yeah, sometimes we don't feel like going through all that work just to make a healthy meal. But but but, now I have a super simple but NUTRITIOUS recipe you can make when you're in that lazy mood!!! Yayayayayay. So, let me tell you all about Tomato Pasta with Parmesan. (Doesn't that name already just get you into a happy mood?)
My mom made up tomato pasta a few years ago, and since then it's probably been one of my favorite meals of hers. (I LOVE pasta.) Basically all it is is noodles (whole grain!), and then the homemade tomato "sauce" (not really) and parmesan/basil/whatever on top. The sauce is obviously the best part of this dish. It's simply diced tomatoes in a red wine vinaigrette sauce, and yeah, it may sound boring, but it tastes like Paradise In A Pan. No joke. And with some CHEESE on top (YAY CHEESE) it really seals the deal. This. Meal. Is. Incredible.
So go make it for dinner today!
Tomato Pasta with Parmesan:
1 box whole grain penne pasta
1 garlic clove
2 cups fresh diced tomatoes
2 Tbsp. red wine vinaigrette
2 tsp. salt (to taste)
Boil pasta according to instructions on the back of the box. Then get out a large pan (turn on medium heat), and add the minced garlic clove. Next, add all the tomatoes and the vinaigrette. Then just simmer it and wait until the tomatoes are nice and soft, but not too mushy. And that's it, you're done with the sauce! How simple is that?!
Finish and serve with Parmesan cheese, basil, and/or bread. I hope you enjoy! Tell me what you think in the comments below. :)
